Chicken from
the train.
(This is a very mild, but tasty chicken recipe
from a dutch tv-cook, Rudolf van Veen, who overheard 2 ladies talking in the
train about this dish. He tried it, and published it in his book. We love it
very much. This is the 'posh' version, but often I just chop everything up and
cook it in one pan until it is ready.)
You
need:
chicken-filet
slices
of ham
slices
of cheese
can of
concentrated mushroom-soup
slices
of pineapple
Way to
do it:
•
divide each chicken filet in 2-3 pieces
• make
packages of the pieces chickenfilet with cheese and ham and put ¼ slice of
pineapple on top of it.
• Lay
them nicely in a ovendish next to each-other
• Pour
the soup, (mixed with a little water, but it has to stay a sauce, not soupe)
over it. (You may mix the soup/sauce with a spoonful of crème-fraiche. But it
is not necessary)
•
sprinkle a little grated cheese over the sauce, and put it in the oven until
the chicken is ready (30-40 minutes).
We
like it with baked potato's , pasta or rice, and a nice salad next to it.
